Apple Pie Muffins
What you'll need:
Topping:
1/4 cup - packed brown sugar
3 tablespoons - AP flour
2 tablespoons - butter, melted
1/4 teaspoon - cinnamon
Muffins:
2 cups - AP flour
3/4 teaspoon - cinnamon
1/4 teaspoon - all-spice
1/4 teaspoon - nutmeg
2 1/2 teaspoons - baking powder
1/2 teaspoon - baking soda
1/2 teaspoon - salt
1 cup - sugar
2 eggs
1/4 cup - butter, melted
1 cup - sour cream
1 1/2 cup - Peeled and Chopped sweet-tart apples like Gala or Pippin
Instructions:
Preheat oven to 400 and spay or line your muffin pans.
To make the topping, combine all topping ingredients with a fork until crumbly.
In a large bowl whisk together your dry ingredients: flour, baking soda and powder, spices and salt. In another bowl whisk together your wet ingredients: sugar, eggs, butter, and sour cream until blended.
Add the wet ingredients to the dry and stir to incorporate. Add the apples and fold them in as little as possible to get the apples distributed.
Divide the batter into your muffin pans and sprinkle with the topping.
Bake for 18-20 minutes turning once half way through. Insert a toothpick and when it comes out clean your muffins are ready to go. ENJOY!
Tips:
If you want, you can use cinnamon only in the batter, use 1 1/4 tsp.
You can use Granny Smith apples and they will work just fine, they add just a little tartness.
